The coffee must meet stringent criteria to be featured in Citizen Bean: it has to come from a small-batch roaster and has to be recognized in the culinary world for its high quality. 'Zoka have been on the short list of quality third wave roasters for years,' said Mal Stearns at Citizen Bean. 'The third wave consists of roasters involved in mentoring small farming co-ops to ensure their quality and sustainability.' Every coffee Citizen Bean sends to its subscribers comes with a special pairing. The Zoka roasts will arrive with a sweet European brown sugar cube to bring out caramel nuances in the brews.
